Summer Salad Recipe

With the summer upon us I thought I'd share my favourite summer salad recipe with you which is just perfect to accompany bbq's and looks great in our scalloped dishes.
Ingredients-
- Little gem lettuce
- punnet of cherry or plum tomatoes
- bunch of asparagus
- 2 boiled eggs
- parma ham
- new potatoes
Method-
Wash the lettuce leaves and tare into the large dish.
Put the cherry tomatoes and asparagus into a roasting tin with olive oil and roast for 10 minutes.
Cut the boiled eggs into quarters.
Fry the parma ham in a frying pan until crispy.
Boil the new potatoes, or alternatively pop them in the air fryer to crisp up.
Once all the veg has cooled pop them all into the dish with the lettuce and give it a good mix. Sprinkle with the crispy parma ham and top with the boiled eggs. Serve with a garlic mayo.
